Once properly removed from the dorsal muscle of the salmon, all the expertise of the Borvo house is put to use.

For 30 years, the family-run company Le Borvo has been the gastronomic reference in salmon smoking, founded by a Michelin-starred chef. Salmon (Salmor salar) from Norway, Scotland, and Ireland are meticulously selected. The salting, enriched with six spices, must be subtle to preserve the fish's delicate flavor. Similarly, cold smoking with beech sawdust adds subtle notes to the fish. Matured and then sliced by hand, Le Borvo smoked salmon is always a guarantee of quality.
