“Le Puy green lentil has been cultivated for 2000 years on the volcanic highlands of Velay from 700 to 1000 m above sea level. It is characterized by its delicate taste, a thinner skin and a less floury almond than other lentils, thus allowing rapid cooking. The appellation area is characterized by a micro-climate with a long and harsh winter and spring. The lentil, a Mediterranean plant, suffers from the cold at the start of growth and then returns to climatic conditions close to those of its original environment (that is to say hot, dry and sunny) in the maturity phase. The soil in Velay is rich enough to cover the needs of the lentil, so it is grown without fertilizer. This culture has been based on the know-how of lentil producers for generations.” M.
