During its 6 month maturing in the Beillevaire cellars, Comté matures slowly and for a long time under the watchful eye of the refiners, resulting in a fruity taste enhanced by a constant nutty flavor.
This cheese has buttery, roasted-nut aromas and a sweet, lightly grassy finish. It has flavours ranging from milky to nutty.
